I came across this smoothie recipe in Parade magazine and just had to share it. It riffs on the Mojito minus the alcohol. I altered it slightly.
Drop into a blender ::
1 cup of coconut water or plain water
1 tsp of finely grated lime zest
2 limes peeled and quartered
1 cup torn kale leaves – spinach works too
1/2 cup packed mint leaves
2 cups frozen pineapple chunks
Blend until smooth. I think I ended up adding about 1/2 cup more coconut water. What I did not finish I put in the refrigerator and used the next day with a handful of ice and blended again! It’s very refreshing and summery with a gorgeous green color.
